Bretts Turkey Chili

  • 2 tablespoons olive oil
  • 1.5-2lbs pounds ground turkey (I get the multi packs at Costco they are 1.7lbs)
  • 3 garlic cloves, minced (or 1Tbsp of jar garlic)
  • 1 diced sweet onion
  • 5 Carrots chopped
  • 4 Celery cut down the middle then chopped
  • 4 tablespoons chili powder
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon cayenne red pepper {optional for spice}
  • 2 -15 ounce can black beans, drained and rinsed
  • 2 –15 ounce cans red kidney beans, drained and rinsed
  • 2 -15 ounce cans of cannellini beans (or white kidney beans)
  • 2 –15 ounce cans of diced tomatoes, drained (fire roasted preferred here)
  • 1 – 6 ounce tomato paste
  • 3 cup chicken broth {use 1 cup of the broth to deglaze the pot then you will add the other cup’s later in the recipe}

Prep the Instant Pot

  • Turn on the sauté mode and heat the pot. Add 2 tbsp olive oil to coat the bottom.

Brown the Turkey

  • Add turkey with a dash of salt & pepper. Let it sit without stirring for ~2 mins to brown.
  • Break apart with a spoon and cook 4–5 mins until browned.
  • Remove turkey, drain any liquid, and set aside.

Sauté Veggies & Spices

  • Add remaining olive oil. Sauté onions ~3 min.
  • Add garlic and stir until fragrant – 1 min.
  • Add Carrots and Celery sprinkle with salt to allow veggies to sweat – 3-5 mins
  • Add spices. Cook until the pepper softens and aromatics bloom 2–3 mins.

Deglaze the Pot

  • Pour in 1 cup chicken broth and scrape up browned bits from the bottom. This prevents burn notices. At this point turn off sauté mode and allow the Instant pot to cool for a few minutes. This should prevent hot spots and keep the Instant Pot from throwing an error code when pressurizing.

Layer the Ingredients

  • Return turkey to the pot.
  • Add remaining 2 cup broth, beans, drained tomatoes, tomato paste — layering helps prevent burn errors.

Pressure Cook

  • Seal lid.
  • Cook on Manual High Pressure for 15 minutes.
  • Quick release pressure (or natural for ~5 mins then quick).

Finish & Serve

  • Open carefully, stir, and adjust salt/pepper.
  • Serve with favorites like sour cream, shredded cheese, cilantro, lime, or chips.

Notes

  • You can use Ground Beef instead!
  • Add corn if you like
  • Omit some of the veggies if you want, add other veggies like peppers etc.
